Phyllis – Almond Mead

Inspired by the Greek legend of Phyllis, whose devotion transformed her into an almond tree, this mead is a quiet ode to loyalty, longing, and the sweetness that endures.

Made from a wildflower honey blend and hand‑crafted almond infusion, Phyllis opens with a soft, sweet almond aroma—gentle, comforting, almost nostalgic. The first sip is smooth and delicate, carrying a natural almond flavor that lingers like a promise kept. Its sweetness is warm rather than heavy, letting the honey and almond harmonize in a way that feels both ancient and refined.

Just as Phyllis blossomed again when love returned, this mead unfolds with a subtle floral lift beneath the almond, a reminder of the wildflowers at its heart.

A quiet beauty. A faithful spirit. A glass that blooms.

Phyllis — Her Story, Her Sorrow, Her Bloom

In Greek mythology, Phyllis is remembered as a figure of unwavering devotion—one whose love was so profound that even death could not silence it.

She was a Thracian princess who fell deeply in love with Demophon, the son of Theseus. When Demophon left to settle affairs in Athens, he promised to return and marry her. Phyllis waited faithfully… and waited… and waited. Days became months. Hope thinned. Her heart, once bright with promise, dimmed under the weight of longing.

When she finally believed he would never return, grief overtook her. In some versions she died of sorrow; in others she took her own life. But the gods, moved by her devotion, transformed her into an almond tree—a symbol of endurance, patience, and love that persists even in barrenness.

When Demophon finally returned and learned of her fate, he embraced the tree in mourning. At his touch, the almond tree burst into bloom, though it was still winter. This miracle became the emblem of Phyllis’ love: a heart that blossoms again, even after despair.

The Almond

The almond is Phyllis herself—her transformation, her devotion, her quiet strength. Its sweet aroma and delicate flavor echo the gentleness of her love and the purity of her longing.

The Wildflower Honey

The wildflower honey blend mirrors the landscape of Thrace and the emotional terrain of her story: floral, warm, and subtly complex. It represents the world she waited in, the fields she walked, and the life she hoped to share.

The Sweetness

The sweetness of the mead reflects the tenderness of her devotion—not cloying, but heartfelt and enduring.

The Smooth, Delicate Profile

Just as Phyllis’ story is soft yet powerful, the mead carries a refined almond character that lingers like a memory. It’s gentle, but it stays with you.

The Bloom

Every sip is a small reenactment of the mythic moment when the barren almond tree blossomed again. The mead is that bloom—unexpected, beautiful, and full of life.

A Myth in a Glass

Phyllis – Almond Mead is more than a drink. It is a story of devotion that outlasts despair, of sweetness born from sorrow, of a love that flowers again.

It invites the drinker to taste not just almond and honey, but the ancient Greek belief that even in the coldest season, the heart can bloom.
